Buckwheat Pancakes


  • 1 cup Skim Milk
  • 2 pc Eggs
  • ½ cup Whole Wheat Flour
  • ½ cup Buckwheat Flour
  • 1 teaspoon Baking Soda
  • ½ cup Apple Sauce
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Vegetable Oil


1. In a medium sized bowl, whisk together the milk, eggs, apple sauce and vanilla extract. In another bowl, combine the whole wheat flour, buckwheat and baking powder. Combine the two bowls and mix until it forms a pancake batter. If you need more liquid in the batter, add more skim milk. It the batter is too loose, add more whole wheat flour.

2. Heat the oil in a skillet. Once hot, add the batter in order to from pancakes. Cook until golden brown on the bottom, then turn. Cook until fully cooked. Serve with a fruit preserve if desired.
