Ethiopian Cabbage

Ingredients (serves four people)

  • ¼ cup Olive Oil
  • 2 pc Carrots, chopped
  • 2 pc Shallots, minced
  • ½ teaspoon Cumin, ground
  • ¼ teaspoon Turmeric, ground
  • 1/3 head Cabbage
  • 4 pc Red Potatoes, diced
  • Sea salt and Pepper to Taste

1. In a medium sized sauté pan, heat to olive oil to medium high heat. Add the carrot and shallot to the pan and cook for five minutes. Add the cabbage, cumin, turmeric, sea salt and pepper then cook for fifteen minutes. Next, add the potatoes along with ¼ cup of water. Cover the pot, then cook for an additional 25 minutes, or until the potatoes are completely cooked. Cook for another five minutes until the water is fully evaporated, then serve warm.
