Papaya with Mahi Mahi


2 Tablespoons Olive Oil
2 pc Garlic, mined
1 pc Shallot, chopped
1 pc Red Bell Pepper, chopped
1 cup Papaya, peeled, seeded and cubed
1 pc Jalapeno, finely minced
1 Tablespoon Lime Juice
2 pc Mahi Mahi (6 ounces each)
3 Tablespoons Sliced Almonds
Sea Salt and Pepper to Taste


1. Preheat an oven to 350⁰ F ( 175⁰C).

2. Place the mahi mahi in a baking pan, then top with the olive oil, garlic, shallot, bell pepper and jalapeno. Next, top with the papaya, lime juice and almonds. Bake in the oven for 30 minutes, or until the fish is fully cooked. Serve with jasmine rice if desired
