Roasted Broccoli with Cashew and Lemon

Ingredients (serves four people)

  • 2 cups Broccoli Florets
  • ¼ Cashews, halved
  • 1.5 Tablespoons Olive Oil
  • 2 pc Garlic, minced
  • 1 teaspoon Lemon Juice
  • ¼ teaspoon Lemon Zest
  • Sea salt and Pepper to Taste

1. Preheat your oven to 350⁰F
2. In a large mixing bowl, combine the broccoli, olive oil, cashew, lemon zest, garlic and sea salt and pepper. Place the mixture in a baking pan, then bake for 15 to twenty minutes, or until the slightly brown on the edges. Once cooked, remove from the oven and place the mixture back in the mixing bowl. Add the lemon juice, then mix well. Serve warm with rice and roasted chicken for a simple and delicious dinner.
