Stew of Black Eyed Pea and Ham

Ingredients (serves four people)

1 pound Black Eyed Peas
2 cups Lean Ham, cooked
Sea Salt and Pepper to Taste
2 pc Garlic, finely minced
1 cup Onion, chopped
1 cup Tomato, diced


1. Place the peas in a large cooking pot then cover the peas with water until they are at least 2 inches covered in water. Add the ham, garlic, shallot, tomato, salt and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover the pot, and cook for two hours, or until the peas are tender.
